Vegan Black Bean and Mango Salad Recipe
- Serves: 3 servings
- Total preparation time: 15 minutes
400 grams of black beans – that’s one can worth if you’re using pre-cooked
1 sweet pepper
5 spring onions
1 chili – you can use more or less depending on your preferred level of spice
1 handful or fresh corriander
The juice of 1/2 a lime
1 ripe mango
2 tablespoons of olive oil
Salt to taste
1. Dice the sweet pepper and mango.
2. Chop the spring onion, chili, and coriander.
3. If you’re using pre-cooked beans drain and rinse them.
4. Place all the ingredients in a bowl and toss to combine.
5. Add salt and chilli to your taste
Serve and enjoy!
