The days are longer and the nights warmer so I think it’s safe to say its Summer time! There are many things I love about the summer; blue skies, picnics outside, flowers in bloom but one of the highlights for me is the food. I don’t do much to debunk the myth that vegans just eat salads because, well I eat A LOT of salads. I just really like salads and honestly I think that I can whip up a pretty good one. Now that Summer is here and making its presence known with these beautiful sunny days you want to be tucking into something fresh and delicious to tantalise your taste buds. This vegan black bean and mango salad recipe is one of such creations that’s in a league of its own. Using unique ingredients and flavour combinations this salad is a real winner and never fails to impress every time I serve it. The exotic and fresh tasting mango is complimented beautifully with the addition of fresh herbs and lime juice. Plus you can kick things up a notch by adding as much chilli as your tongue can handle. Vegan Black Bean and Mango Salad
Fresh and delicious this salad is a winner all round

One myth that I do debunk well though is the one that salads are “boring” and “just a load of leaves”. Not your average iceberg lettuce and cucumber offering this salad uses black beans and fresh mango making it a delicious masterpiece standing out from the dull salad crowd. This recipe also uses fresh and crunchy sweet peppers to give it a further depth of flavour and texture. Plus the addition of fresh lime and coriander give this dish a delicious lift.

This recipe uses less than 10 ingredients and can be prepared in 15 minutes. That’s delicious food, fast & plus is healthy – magnificent stuff! 

This vegan black bean and mango salad is great to whip up in a hurry if you want to impress. You can use pre-cooked black beans which means you only need to assemble and serve, no need to faff about cooking in the kitchen on a beautiful Summer’s day. Vegan Black Bean and Mango Salad Recipe

  • Serves: 3 servings
  • Total preparation time: 15 minutes

400 grams of black beans – that’s one can worth if you’re using pre-cooked
1 sweet pepper 
5 spring onions
1 chili – you can use more or less depending on your preferred level of spice
1 handful or fresh corriander
The juice of 1/2 a lime
1 ripe mango
2 tablespoons of olive oil
Salt to taste

1. Dice the sweet pepper and mango. 
2. Chop the spring onion, chili, and coriander.
3. If you’re using pre-cooked beans drain and rinse them. 
4. Place all the ingredients in a bowl and toss to combine. 
5. Add salt and chilli to your taste

Serve and enjoy!
